Cod and Shrimp Fritters Ingredients

  • Salted cod – 200 g
  • Boiled peeled shrimps – 200 g
  • Onion (young) – 1 pc.
  • Pea flour – 100 g
  • Wheat flour – 100 g
  • Water (for dough) – 1.3 cups
  • Parsley greens – 0.5 bunch
  • Vegetable oil – for deep-fat
  • Saffron – to taste

Cod and Shrimp Fritters Instructions

  1. Finely chop the salted cod into small pieces, soak in cold water for 5-10 min, then drain well.
  2. Finely chop the boiled shrimps, young onion, and parsley.
  3. Mix the wheat flour and pea flour together in a bowl.
  4. Add 1.3 cups water to the flour mixture and stir until smooth.
  5. Add the drained cod, then stir in the shrimps, onion, and parsley to combine.
  6. Sprinkle saffron to taste into the dough, stir well, and let rest for 10-15 min.
  7. Heat vegetable oil in a large frying pan to 175°C (350°F) over medium-high heat, with the oil about 1-1.5 cm deep.
  8. Spoon portions of dough (about 2-3 tablespoons per fritter) into the hot oil and flatten slightly so the fritters are almost completely covered.
  9. Fry for 3-4 minutes until the bottom is golden brown.
  10. Flip the fritters carefully and fry the other side for 2-3 minutes until golden brown.
  11. Transfer the cooked fritters to paper towels to drain excess oil.
