Curd Cheese Cake (Made from Shortcrust Pastry)

The most delicate cheesecake with cottage cheese is prepared without yeast! Delicious shortcrust pastry with aromatic and delicate curd-vanilla filling is perfect for breakfast or just for tea. The cheesecake just melts in your mouth!) Cooking is insanely easy!

Ingredients

For the dough:

  • Flour – 300 g (2 cups, 250 ml)
  • Butter – 100 g (+ for preparing the mold)
  • Sugar – 2 tbsp
  • Salt – 0.5 teaspoon
  • Baking powder – 1 teaspoon
  • Egg – 1 pc.
  • Sour cream – 1 tbsp

For filling:

  • Cottage cheese – 600 g
  • Vanilla sugar – 1 teaspoon
  • Eggs – 3-4 pcs.
  • Sugar to taste
  • Salt to taste

To grease the cake (optional):

  • Egg yolk – 1 pc.
  • Milk – 1 teaspoon

Directions

  1. Prepare the dough: mix flour, sugar, salt and baking powder with a whisk.
  2. We rub cold butter on a coarse grater, periodically immersing a piece of butter in flour.
  3. Grind butter and flour into crumbs.
    Add one egg and sour cream.
  4. Knead the dough until smooth.
  5. Wrap the dough in a bag (cling film) and put it in the refrigerator for 20 minutes.
    Preheat the oven to 190 degrees.
  6. Prepare the filling: mix cottage cheese, sugar, salt and vanilla sugar.
  7. Add 3-4 eggs and mix well again.
  8. Grease a baking dish (mine – 26 cm in diameter) with butter.
  9. Roll out the dough to the size of the mold.
  10. We spread the shortbread dough into a mold and form the sides.
  11. Put the curd filling on the dough and level it.
  12. Grease the surface of the curd filling with a mixture of yolk and milk (optional).
    We bake in a preheated oven at 190 degrees for 30-40 minutes.
  13. Give the shortcrust pastry pie with curd filling, cool, and then cut into small pieces.
    A fragrant and delicious cheesecake with cottage cheese is ready!
