Delicious Cheesecakes from a Coffee Shop

Delicious cheese cakes. Be sure to cook.

Ingredients

  • Cottage cheese – 300 g
  • Flour – 1.5 tbsp + flour for modeling
  • Egg – 1 pc. (Yolk)
  • Sugar – 3 tbsp
  • Salt – 1 pinch
  • Vanilla – on the tip of a knife
    For decoration:
  • Sour cream – 1.5 tbsp
  • Raspberry jam – 1 tbsp

Directions

  1. We mix all the ingredients (I had loose homemade cottage cheese, so do not forget to pass it through a sieve) and mix with a spatula. If you stir for a long time or use a mixer, the mass will spread, and it will be difficult to sculpt cheesecakes, so just stir so that the sugar is evenly distributed.
  2. Next, powder our hands with flour, separate 50 grams from the curd mass and roll a ball in our palms until it becomes sticky.
  3. Then we roll it in flour, and roll it again in our palms. We repeat this 4 times. Then we roll it again in flour and throw this ball into a mold with a diameter of 6 cm. I don’t have such a mold for cheesecakes at home, and I made it from foil. In a mold, shape the cheese pan with your fingers and move the pancakes to the side for further frying. This method of making curd cakes will allow us to feel the whole curd filling, and not flour, since we use flour only for sculpting curd cakes.
  4. I decorated the plate with cheese cakes with sour cream and raspberry jam – put the sour cream on the plate, smooth it with a spoon in a circular motion. Next, put the raspberry jam in a culinary bag (I just twisted it out of baking paper) and, starting from the middle, draw a spiral with raspberry jam. Next, we spread with a toothpick to the sides, starting from the middle.
