Ingredients
Quinoa – 200 g
Cucumbers – 3 pcs.
Carrots – 1-2 pcs.
Bulgarian pepper (preferably multi-colored) – 2-3 pcs.
Hot pepper – 1 pc.
Green onions – 3-4 pcs.
Parsley greens – 1 bunch
Mint – 10 leaves
Nuts – 50 g
Vegetable oil – 40 ml
Salt – 1.5 teaspoon
Lemon (juice) – 1 pc.
Directions
Pour 200 grams of quinoa into a saucepan or a heavy-bottomed pan, light the fire and heat the quinoa well. Add 0.5 teaspoon of salt and 400 milliliters of boiling water, stir, cover, make very low heat, cook until tender, about 20 minutes without opening the lid. After 20 minutes, turn off and let cool.
Cut into small cubes and put 3 cucumbers in a bowl.
Slice 1-2 carrots. Chop 2-3 different colored bell peppers. First, red. And then yellow.
Chop one hot pepper. (If you want the salad to be spicier, then chop the pepper along with the seeds).
Cut and add 3-4 green onions to the salad.
Finely chop 10 mint leaves.
Finely chop a bunch of parsley.
Chop 50 grams of toasted nuts.
Add quinoa to the vegetables and stir.
Prepare a salad dressing with quinoa, cucumber, carrot and pepper. Squeeze the juice of one lemon into a bowl, add 1 teaspoon of salt, mix, add 40 milliliters of olive or any other vegetable oil, mix.
Pour the dressing over the quinoa salad.
Stir the diet salad and serve. We serve quinoa salad as a cold appetizer or as a side dish for meat or fish.
