Ingredients

  • 1 pack dumplings your choice, possibly from the day before
  • 1 medium onion (s)
  • 50 g bacon
  • Oil for frying
  • 1 bunch chives
  • 1 tomato (s)
  • 4 egg (s)
  • salt and pepper

Instructions

  1. Prepare the dumplings according to the instructions on the packet, drain and set aside. Peel and dice the onion and cut the bacon into strips. Wash the chives, pat dry and cut into rings. Wash, core and dice the tomato.
  2. Fry the onion and bacon in a pan in the hot oil. Cut the dumplings into small pieces, add and fry until golden. Mix the eggs and add the chives. Season with salt and pepper. Pour the egg mixture over the dumplings.
  3. Cover and let stand for about 15 minutes over low heat. Sprinkle the diced tomatoes over the dumplings just before serving.
  4. If there are leftover vegetables, I also like to throw them in the pan, which also turns the whole thing into a delicious main course.
  5. If the dumplings are already ready (from the day before), the preparation time will of course be reduced accordingly.
