Ingredients

  • 1 pack dumplings (mini dumplings)
  • 1 onion (s)
  • 50 g breakfast bacon
  • 1 bunch chives
  • 1 tomato (s)
  • 1 tablespoon oil (germ oil)
  • 5 egg (s)
  • salt and pepper

Instructions

  1. Let the mini dumplings simmer in boiling salted water for about 7 minutes. Then lift it out with a slotted spoon and drain in a sieve.
  2. In the meantime, peel the onion and cut it into fine cubes. Cut the bacon into strips. Wash the chives, pat dry with kitchen paper and cut into fine rings. Wash the tomato, pat dry and remove the stem end. Core the tomato and dice the pulp.
  3. Heat the germ oil in a pan. Fry the onion cubes with the bacon in them. Add the dumplings and fry until golden.
  4. In the meantime, stir the eggs in a small bowl and add the chives. Season with salt and pepper and pour over the dumplings. Cover and let stand for about 15 minutes over low heat. Sprinkle the diced tomatoes on top just before serving.
