Egg Roll with Sausage, Tomatoes and Herbs

A simple and delicious egg roll with sausage, tomatoes and herbs looks very original and attractive. Such a bright and satisfying egg roll will be an excellent alternative to the usual omelet and is perfect for breakfast or a snack.

Ingredients

  • Eggs – 7 pcs.
  • Tomatoes – 170 g
  • Boiled sausage – 90 g
  • Fresh parsley – 15 g
  • Salt to taste
  • Ground black pepper – to taste
  • Vegetable oil (for frying) – 30 ml

Directions

  1. We prepare products.
    It is better to choose hard varieties of tomatoes.
  2. Cut the sausage and tomatoes into small cubes.
  3. Finely chop the parsley, leaving a few leaves for serving.
  4. Break eggs into a bowl.
  5. Beat the eggs with a whisk or mixer until smooth. Salt and add black pepper to taste.
  6. Add sausage, tomatoes and parsley to the eggs.
  7. Mix so that all components are evenly distributed.
  8. Heat vegetable oil in a frying pan. Pour a small amount of the egg mixture (about 1 ladle) into the pan. Fry over medium heat for about 1-2 minutes, until the eggs “set”. The pan can be covered with a lid.
  9. Using a spatula, fold the resulting pancake into a roll, leaving a small edge unrolled.
  10. Move the egg roll to the edge of the pan. If necessary, grease the free part of the pan with vegetable oil. Stir the egg mixture and pour into the pan the same amount as for the previous pancake. Let the egg mixture spread and connect to the edge of the already made roll.
  11. We wait 1-2 minutes until the mixture “grabs”.
  12. Then we continue to roll up the roll. We do this with the entire egg mass.
  13. Turn the finished roll seam down, turn off the heat, cover the pan with a lid and leave for 3-4 minutes.
  14. Egg roll with sausage, tomatoes and herbs is ready. Cut the omelette roll into portions and serve.
