Ingredients

For the dough:

  • 550 g flour, type 405
  • 50 g almond (s), round
  • 50 grams sugar
  • 1 teaspoon, heaped with vanilla sugar
  • 1 bag / s aroma, (orange cake)
  • 1 pinch (s) salt
  • 0.5 ½ cube yeast
  • 80 g butter
  • 300 ml milk
  • 1 egg white

For the filling:

  • 2 apples, large boskop
  • some lemon juice
  • 500 g mascarpone
  • 5 teaspoons, heaped with vanilla sugar
  • 60 g suar
  • 1 packet custard powder, vanilla
  • 2 tablespoon honey
  • 175 g raisins
  • 1 egg yolk
  • tea
  • milk

Instructions

  1. For the dough, put all the dry ingredients in a bowl and mix together. Warm the milk, melt the butter in it and let it cool down so that the yeast does not die. Dissolve the yeast in it too.
  2. Add to the dry ingredients together with the egg white and knead everything well. Let rise for about 30 minutes or until the batter has doubled.
  3. In the meantime, peel the apples, remove the dark spots and core and cut into small pieces. If the amount of apples doesn`t seem too small, you can add another smaller apple.
  4. Weigh the raisins, put in the tea bag, add hot water and soak in hot tea. (I took Kaminabend from the teapot, other types are also possible.)
  5. Put the vanilla sugar, sugar, vanilla pudding powder and honey in a bowl, then add the mascarpone. Mix everything well, this is best done with the whisk of the hand mixer.
  6. Drain the raisins after 15 minutes and fold into the mascarpone cream with the apples.
  7. Flour the work surface, place the dough on it and divide it, shape it into an oblong shape and roll it out. Spread the egg yolk around the edges and pour the cream mixture evenly on the two pieces of dough and spread it a little. Carefully roll up and lay the two strands like a plus sign, then braid them into a braid. Place the finished plait on a baking sheet lined with baking paper (ideally with two people) and let it rest for a while.
  8. Preheat the oven to 200 °.
  9. Brush with milk before the plaited yeast goes into the oven.
  10. The braid is baked for about 30-40 minutes.
  11. Attention! The braid can go wide.
