Ingredients

For the dough:

  • 350 g flour
  • 0.5 ½ pack baking powder
  • 150 grams sugar
  • 175 g butter
  • 4 tablespoon lemon juice

For the filling:

  • 125 g butter
  • 175 grams sugar
  • 1 packet vanilla sugar
  • 5 egg yolks
  • 1 tablespoon semolina
  • 750 g quark
  • 250 g strawberries

Instructions

  1. Mix flour and baking powder, add sugar. Work in the butter and lemon juice. Process everything quickly with the dough hook to a smooth dough.
  2. Halve the dough and crumble into crumble with your fingers. (ATTENTION: It is important to work quickly. Therefore first mix quickly with the dough hook, then crumble into crumbles with cold fingers! When the dough becomes warm, it becomes tough!) Put half of it in a greased springform pan (Ø 26 cm) and press it down well with your fingers as the bottom. Preheat the oven to 180 degrees (fan oven to 160 degrees).
  3. For the filling, beat the butter, sugar and vanilla sugar until frothy. Mix the egg yolks, add to the butter mixture with the semolina and quark. Wash and clean the strawberries, cut into wedges and fold into the curd mixture. Pour the mixture into the springform pan. Sprinkle the remaining crumbles evenly over the curd mixture.
  4. Bake the cake in the oven for about 60 minutes, then take it out and let it cool on a wire rack.
