Cheesecake with Strawberry Sauce

Cheesecake is made with cream cheese and served with strawberry sauce.

Ingredients

  • Cream cheese (softened) – 350 g
  • Large eggs – 4 pcs.
  • Vanilla waffles – 20 pcs.
  • Sugar – 1.5 cups + 0.5 cups
  • Salt – 0.25 teaspoon
  • Egg whites – 3 pcs.
  • Vegetable oil
  • Corn starch – 3 tbsp
  • Vanilla extract – 1 teaspoon
  • Lemon juice – 1 teaspoon
  • Fresh strawberries for garnish (optional)

For the sauce:

  • Fresh strawberries (cut into slices) – 650 g
  • Water – 0.5 cups
  • Sugar – 2 tbsp
  • Water – 1 tbsp
  • Corn starch – 2 teaspoon
  • Lemon juice – 2 teaspoon

Directions

  1. Turn on the oven to preheat to 180 degrees.
  2. Place ½ cup of sugar, waffles and a pinch of salt in the bowl of a kitchen processor, grind until crumbly.
  3. Pour 1 egg white into a small bowl, beat until fluffy. With the motor turned on, add 2 tablespoon. tablespoons of whipped protein foam (remove the rest of the protein foam). Put this mixture in an oiled round 22 cm springform cake tin. Place in the oven for 10 minutes. Then remove from the oven, let cool on a wire rack.
  4. Reduce the temperature in the oven to 150 degrees.
  5. In a large bowl, combine 1.5 cups of sugar with starch and a pinch of salt. Add cream cheese, beat with a mixer on medium-high speed until smooth. Then reduce the speed to the minimum, add vanilla extract and 1 teaspoon of lemon juice. Then add eggs (one at a time), beating well after each. Add 2 remaining egg whites, beat well.
  6. Put the cheese mass in the cake pan and place in the preheated oven, bake the cheesecake for 1 hour and 15 minutes. Then turn off the oven and leave the cheesecake in it for 30 minutes. Take the pie out of the oven, hold it along the sides with a knife blade. Allow the dessert to cool completely, then remove the pan and place the cheesecake in the refrigerator for 8 hours, or better for 12. Decorate the pie with strawberries.
  7. Prepare the sauce. Mix chopped strawberries with ½ cups water and 2 tablespoon. tablespoons of sugar in a small saucepan. Put on medium-high heat, bring to a boil. Reduce heat, cook sauce for about 5 minutes. Remove the saucepan from the stove. Pass the sauce through a sieve, pressing the berries with a spoon. Remove seeds. Pour the sauce back into a saucepan. In a separate bowl, mix 1 tablespoon. a spoon of water and 2 teaspoons of starch, stir. Add this mixture to a saucepan with sauce, put on medium heat, and cook, stirring occasionally, until thickened, about 1 minute. Pour the sauce over the gravy boat and leave it at room temperature to cool. Then add lemon juice, mix.
  8. Serve the cheesecake with strawberry sauce.
