Focaccia Sandwiches with Chicken Salad

The puffed focaccia makes an excellent sandwich base, and the filling is made from chicken, vegetables and nuts.

Ingredients

  • Fried chicken fillet (diced) – 4 cups
  • Petioled celery (chopped) – 1 glass
  • Walnuts (fried, chopped) – 1/3 cup
  • Focaccia bread (cut in half and then into 20 slices) – 450 g
  • Fried Bulgarian pepper, canned (chopped) – 330 g
  • Mayonnaise – 0.5 cups
  • Natural yogurt without additives – 1/3 cup
  • Homemade or commercial pesto sauce – 1/3 cup
  • Lemon juice – 1.5 teaspoon.
  • Salt – 0.5 teaspoon.
  • Ground black pepper – 0.5 teaspoon.
  • Lettuce – 10 leaves

Directions

  1. In a large bowl, combine mayonnaise, yogurt, pesto sauce, lemon juice, salt and black pepper.
  2. Put chicken, celery and walnuts in a bowl with dressing.
  3. On each of 10 slices of base bread, put 1/2 cup of chicken salad, 2 tablespoon on top. tablespoons of fried pepper and 1 lettuce, cover with the remaining 10 halves, lids.
