Ingredients

  • 3 slices smoked pork, cooked
  • 300 g mushrooms
  • 125 ml red wine
  • 100 ml vegetable stock
  • 2 tablespoon ajvar
  • 1 teaspoon pepper (herb pepper)
  • some paprika powder
  • a bit salt
  • some ghee, or clarified butter
  • 1 tablespoon oil, for frying

Instructions

  1. Sort the mushrooms and cut into not too thin slices.
  2. Heat ghee or clarified butter in a non-stick pan and fry the mushrooms until the juice has evaporated. Then fill up with the wine and vegetable stock and the spices and let everything simmer nicely at a medium temperature. The consistency can be varied a little with the amount of liquid.
  3. At the same time, fry the Kassel slices in another pan with a little oil until golden brown on both sides.
  4. Place the meat on a platter and pour the mushrooms over it. Tastes very good with a potato salad or with fresh bread or baguette.
