Gnocchi Salad with Green Beans and Sundried Tomatoes

Ingredients

500 g nocchi, finished product
400 g beans, frozen reen beans
1 glass tomato (s), dried, pickled in oil
200 g mozzarella mini balls, drained

For the dressing:

Gnocchi Salad with Green Beans and Sundried Tomatoes

Instructions

Cook the gnocchis and the green beans in salted water until they are firm to the bite and drain.
In the meantime, drain the sun-dried tomatoes (save some of the seasoning oil) and cut into cubes. Then prepare a spicy dressing from the ingredients listed and add the dried tomato cubes. Mix the gnocchis and beans with the dressing while they are still warm and allow to cool a little. Just before serving, carefully fold in the mozzarella balls.
The salad tastes lukewarm but also cold if it is well drawn.
