Ingredients

  • 150 g wholemeal spelled flour
  • 2 teaspoons baking soda
  • 60 g suar
  • 0.5 teaspoon ½ cinnamon powder
  • 100 g dried fruits (e.. plums or dates)
  • 80 g walnuts
  • 2 small apples (approx. 0 g)
  • 50 g oatmeal
  • 250 g low-fat quark
  • 2 egg (s)
  • 80 ml rapeseed oil
  • Fat for the shape

Instructions

  1. Mix whole spelled flour, baking powder, sugar and cinnamon. Chop the dried fruits and walnuts. Wash, quarter and core the apples and also chop up the unpeeled. Mix with the dried fruit, walnuts and oatmeal.
  2. Then stir the quark with the eggs and oil until smooth. Quickly stir in the flour and muesli mixture.
  3. Pour the batter into a greased 12-cup muffin pan. Bake the muffins in the oven for approx. 20 - 25 minutes at 180 ° C top / bottom heat. Let it cool down a bit and then remove it from the mold.
  4. The muffins are wonderfully suitable as a healthy snack for in between, quasi as muesli-to-go for the office, school, etc. They can also be frozen well.
