Ingredients

For the dough:

  • 220 g butter
  • 75 g powdered suar
  • 1 pinch (s) salt
  • 375 grams flour
  • 1 tablespoon white wine, possibly 2

For the filling:

  • 1.2 kg apples
  • 1 tablespoon butter
  • 2 tablespoon honey
  • 1 orange (s), zest and juice it
  • 100 ml white wine
  • 1 tablespoon flour
  • 1 teaspoon cinnamon
  • 1 pinch (s) cardamom
  • 200 g fi (s) (soft)
  • 100 g walnuts, halved

Instructions

  1. First, grease a 26 springform pan and chill.
  2. Then for the shortcrust pastry, stir the butter, powdered sugar and salt until frothy.
  3. Add the flour and first stir in a tablespoon of wine, so that a crumbly mass is formed. Now combine these by hand into a smooth dough, if necessary add a second tablespoon of wine.
  4. Now roll out 2/3 of the dough between two layers of cling film and line the mold with it, so that an approx. 3.5-4 cm high edge is created. Roll out the rest of the dough into a 26 cm circle and place on a cake plate. Chill both for at least 30 minutes.
  5. In the meantime, peel the apples for the filling, remove the core and cut into cubes. Heat the butter with the honey in a saucepan and sauté the apples for about 5 minutes, stirring occasionally. Then pour the orange juice and white wine on top and continue to steam for about 10 minutes with the lid closed. Stir occasionally.
  6. Meanwhile preheat the oven to 180 ° C top / bottom heat.
  7. Roughly chop the soft figs and walnuts. Remove the apple mixture from the heat, stir in the flour, cinnamon, cardamom, figs and walnuts.
  8. Now put this filling into the prepared mold lined with dough and place the dough lid on it. Carefully press on the edges.
  9. Bake in the preheated oven for about 40-45 minutes.
  10. Tastes both cold and lukewarm with vanilla, cinnamon or walnut ice cream.
