Green Beans with Mushrooms

A versatile baked dish made from green beans, mushrooms, tomatoes and bell peppers. With minor changes, it can serve as a side dish for meat, as a full-fledged vegetarian dish or as a lean meal.

Ingredients

  • Green beans – 400 g
  • Mushrooms (any) raw – 500 g
  • Medium onions – 2 pcs.
  • Tomatoes (any) – 120-250 g
  • Bulgarian pepper – 1 pc.
  • Hard or semi-hard cheese – 100-150 g
  • Vegetable oil or butter – for frying
  • Soy sauce – to taste
  • Ground black pepper – to taste

Directions

  1. Cooking for 2-3 people. 500 g of any mushrooms (I have frozen aspen mushrooms) we cut randomly for frying, if they were not pre-cut, like mine.
  2. Cut two medium onions into quarters.
  3. To prepare this dish, you can use either only tomatoes, or only bell peppers, or tomatoes and peppers together. I chose the latter option. I took 120 g of cherry tomatoes and cut them into 4 pieces each. If I only used tomatoes, I would take a standard package of 250 g cherry tomatoes.
  4. Cut half of the rather large bell pepper into cubes.
  5. We rub 100-150 g of any hard or semi-hard cheese on a coarse grater. If we are preparing a lean version, then we do not use cheese.
  6. Preheat the oven to 180 degrees. Heat vegetable or butter in a frying pan and fry the mushrooms until all excess liquid has evaporated.
  7. After that, add the chopped onions and fry to the degree you like. I proceed in that order because I don’t want the onions to be boiled in mushroom juice. You can do whatever you like best.
  8. At the very end of frying, pepper mushrooms and onions and sprinkle with soy sauce instead of salt. We mix.
  9. Grease the baking sheet in which we will bake with any oil and put mushrooms and onions into it.
  10. Put green beans on top of the mushrooms – I have a standard 400-gram package. The beans can be boiled beforehand. I do not boil.
  11. Put tomatoes and peppers (or one thing) on ​​the beans, pepper if desired, pour with soy sauce instead of salt.
  12. And sprinkle with grated cheese.
  13. Place the green beans with mushrooms in a preheated oven for 20-25 minutes or until the cheese is browned (for this, at the end of baking, you can use the convection mode). Bon appetit and don’t be afraid to experiment!
