Green Borsch with Nettle

With the arrival of spring, many different greens appear and there is a desire to cook green borscht. I propose to diversify the daily menu by cooking green borsch with nettle. It’s delicious and very healthy!

Ingredients

  • Nettle – 1 large bunch
  • Chicken fillet (breast) – 0.5 pcs.
  • Potatoes – 4 pcs.
  • Carrots – 1 pc.
  • Bulb onions – 1 pc.
  • Bulgarian pepper (green) – 1 pc.
  • Tomato – 1 pc.
  • Vegetable oil – 2-3 tbsp
  • Green garlic (feathers) – 4 pcs.
  • Fresh parsley – 1 bunch
  • Salt – 1 teaspoon
  • Meat broth or water – 3 l
  • Boiled eggs – for serving
  • Mayonnaise – for serving

Directions

  1. Prepare the ingredients for the green borscht with nettle. Peel, wash onions, carrots, and potatoes. Prepare the chicken fillet in advance. Leave the broth in which the chicken was boiled.
  2. Put the broth on high heat and bring to a boil. Place the nettle in a colander and cover well with boiling water.
  3. While the broth is boiling, you need to fry the vegetables. To do this, heat the pan, pour in vegetable oil. Grate the carrots on a coarse grater and put them in a saucepan.
  4. Dice the onions and add to the carrots. Pepper, peel, and chop in any way. Add pepper to carrots and onions. Cut the tomato into cubes and add to the pan.
  5. Fry all vegetables together over medium heat for 5-7 minutes, stirring occasionally.
  6. Cut the potatoes into small cubes. Place potatoes in broth, reduce heat.
  7. Cut the nettle. Add nettles and fry to the pot.
  8. Finely chop the parsley and add to the green borscht for flavor. Chop the greens of the garlic and add to the saucepan.
  9. Cut chicken fillet into small pieces or disassemble into fibers. Add a chicken fillet to borsch 5 minutes before readiness. Since I used meat broth to prepare green borscht, which I had already salted enough, at the end of cooking I will add quite a bit of salt. If you used water or unsalted broth, add 0.5-1 tablespoon. a spoonful of salt. Boil green borsch with nettle until potatoes are cooked. Green borsch with nettle is ready!
