  • Nettle, leaf tips only, 2 large bowls, freshly picked
  • Chervil, fresher
  • 1 onion (s)
  • 1 clove garlic
  • 1 leek
  • 1 large potato (s)
  • pepper
  • salt
  • cream
  • nutmeg
  • Creme fraiche Cheese

Instructions

  1. Sauté the onion and garlic. Add the washed nettles, leek and chervil and cook until the nettles have collapsed. Dice the potato and add. Fill up with the broth and simmer for about 20-30 minutes.
  2. Puree everything and season with salt, pepper and nutmeg. Fold in a little cream. Garnish with a dollop of crème fraîche and possibly some shrimp or smoked trout.
  3. Tastes very good.
