Ingredients

  • 3 handfuls fir branch (s), young, fresh tips

Instructions

  1. First wash all herbs, except the flowers, such as dandelion and daisy blossoms and spin dry in a salad spinner.
  2. Bundle up the woodruff and let it wither overnight.
  3. Put the remaining herbs in a saucepan with 1.5 liters of water, bring to the boil with the lemon and simmer gently for 5-10 minutes. Of the herbs such as chickweed, shepherd`s purse with blossom, ground elder, nettle tips, ribwort and velcro, I took only a few in the crowd. From the creeping Günsel, the Gundermann and also lemon balm a little more and the flowers of the red dead nettle depending on how much you get together and have collected.
  4. The main part is dandelion flowers, daisies and also the pine tops.
  5. I let the boiled brew cool down and only after it was cold did I hang the bundle in with the woodruff. Please do not hang all the way in, not the stems and the leaves only so far that they are in the brew.
  6. I left the whole thing covered in a cool place for 2 days and only then strained it through a sieve. Then add the brown and white sugar to the brew and then boil and cook, stirring constantly, for about 1-2 hours, thick as honey.
  7. If the consistency is right, then fill it in glasses or in the case of syrup in bottles.
  8. It tastes very good and has its own note due to the herbs. The woodruff has his share in this, as does the corn tips of the fir tree.
  9. Try it out, if not available otherwise with other herbs and flowers.
