Hot Smoked Fish (in a Smokehouse on a Gas Stove)

Smoking is easy! You can get wonderful fish in just 25 minutes! And surprise your guests! Today I propose a recipe for hot smoked mackerel in a home gas smokehouse.

Ingredients

  • Mackerel – 2 pcs. (about 750 g)
  • Salt to taste
  • Besides products:
  • Alder chips – a handful

Directions

  1. Mackerel is best for smoking, but other fish can be used. In addition to fish, we only need salt, as well as chips for smoking. You can use alder chips, sawdust of fruit trees, as well as thin branches of fruit trees.
  2. We will clean and rinse the mackerel. Salt the fish and leave it that way for 5 hours. Salt – as usual for frying. The salting time can be shortened by putting the fish in the brine for 2 hours: 250 g of salt per liter of water.
  3. Next, put the fish on a wire rack or on a cloth for half an hour to dry. You can wipe off the carcasses.
  4. While the fish is weathering, prepare the smokehouse. Soak the chips.
  5. Lay the foil crosswise at the bottom of the smokehouse to protect the walls of the smokehouse from dirt. Place the soaked alder chips on the foil.
  6. A drip tray is used to collect the fat, which we place down on the wood chips.
  7. Today I have only two fish, they can be placed on one grid. In general, there are 2 tiers in my smokehouse, on which you can put 4 fish with a total weight of about 1.5 kg.
  8. We close the lid, fill the groove around the peri with water.
  9. We put the smokehouse over medium heat. My smokehouse is on one burner, but there are larger smokehouses – on two burners. After 5-7 minutes, smoke will come out of the fitting. We put a hose on the fitting and take it outside. The time for smoking fish is 25 minutes from the beginning of the formation of smoke.
  10. After 25 minutes, turn off the fire, but do not open the smokehouse for another 15 minutes. The finished smoked mackerel turns out to have a pleasant golden color.
  11. Cool the hot smoked fish and place it in the refrigerator. You can eat it for 5 hours.
