Ingredients

  • 500 g pork fillet (s)
  • 150 g Parma ham, thinly sliced
  • 1 onion (s)
  • 3 cloves garlic
  • 50 g olives, black
  • 1 can tomato (s), chopped
  • 250 ml cream
  • Rosemary, dried
  • Thyme, dried
  • Paprika powder
  • Piment d`Espelette or cayenne pepper
  • Wild garlic, dried
  • salt and pepper
  • olive oil

Instructions

  1. Cut the pork fillet into medallions, wrap them with Parma ham and place in a baking dish.
  2. Dice onions and garlic and sweat in olive oil, but do not let them take any color. Add canned tomatoes and olives and heat slowly, season with the herbs and spices. Add the cream and bring to the boil. Possibly add seasoning. It can also be spicy.
  3. Pour the sauce on the pork fillet slices and put the pan in the oven for about 45 minutes at 180 degrees.
  4. Serve with rice or ciabatta.
