Ingredients

  • 250 g Kadayif douh threads
  • 100 g clarified butter
  • 2 teaspoon syrup, (grape syrup)
  • 250 g mozzarella
  • clarified butter, for greasing the molds
  • Pistachios, chopped, to decorate
  • 1 cup sugar
  • 1 cup water
  • 1 tablespoon lemon juice

Instructions

  1. 1. First the sugar syrup is prepared. For this, water and sugar are put in a saucepan, brought to a boil and simmered for about 10 minutes. Then the lemon juice is added and the syrup has to cook for another 5 - 10 minutes and then get completely cold.
  2. 2. Then the threads of dough are cut into small pieces and placed in a bowl. There is also the melted clarified butter and grape syrup. Everything is kneaded together well with your hands. Then the Kadayif molds are generously greased with clarified butter and a first layer of threads of dough is spread over them. With a second bowl you press the dough threads flat (very important) and the mozzarella is spread over it. Then another layer of dough threads is placed over the mozzarella and is also pressed flat with a bowl. With the quantities listed above, you will receive 5 bowls. 5 You also grease other bowls with clarified butter, as the kadayif are later turned onto an empty, greased bowl when frying.
  3. 3. Now the kadayifs are fried on a medium heat on the stove (it works best on a gas stove) until golden brown on one side and then turned onto an empty bowl and fried until golden brown in front of the other side.
  4. 4. Then ½ ladle of cold sugar syrup is placed on the künefe and decorated with pistachios. They are then eaten hot.
