Lazy “Achma” with Cottage Cheese and Green Onions

A simple, budget dish made from readily available products is lazy pita bread with cottage cheese and green onions. Actually, classic achma is a kind of Georgian khachapuri made from several layers of dough stuffed with suluguni. We will prepare “lazy” achma using multifunctional thin lavash, and for the filling we will mix cottage cheese, sour cream and fresh green onions. And it will be just as tasty, you’ll see!

Ingredients

  • Thin lavash – 1-2 pcs.
  • Cottage cheese – 300 g
  • Sour cream – 100 g
  • Kefir – 50 ml
  • Green onions – 20 g
  • Egg – 1 pc.
  • Salt – 1/3 teaspoon

Directions

  1. Prepare foods on the list. Remove thin pita bread from the package as late as possible, otherwise it will dry out and cease to be elastic. Lazy achma cooks quickly enough, so it is better to turn on the oven in advance to warm up to 180 degrees
  2. Prepare the fill. Combine kefir, egg and salt in a deep bowl.
  3. Stir until smooth.
  4. Prepare the filling. Rinse green onions, dry and chop finely with a knife. Set some chopped onions aside for serving.
  5. Combine cottage cheese, sour cream and green onions in a separate bowl, add salt.
  6. Stir.
  7. Cut the lavash into rectangles in size close to the bottom of the shape (I got 5 pieces). Make one rectangle of pita bread larger than the rest – this will be the basis of the achma.
  8. Cover the baking dish with a large pita bread.
  9. Put one rectangular sheet on the bottom to reinforce the bottom and brush with filling (a mixture of kefir and eggs). It is convenient to lubricate the sheets with a silicone cooking brush.
  10. Spread 1/5 of the filling over the surface in a thin layer.
  11. Lay another rectangle of pita bread on top, brush it again with fill and lay out part of the filling. Repeat this until the pita bread and filling run out.
  12. Lubricate the last sheet of pita bread and wrap the hanging sheets of pita bread inside the mold.
  13. Bake the lazy achma in an oven preheated to 180 degrees, about 25-30 minutes, until golden brown.
  14. Cool the finished achma slightly in the mold, then transfer to a dish and garnish with green onions.
  15. Juicy filling thanks to sour cream and onions, crunchy outside and soft inside lavash dough – a great combination.
  16. Lazy achma with cottage cheese and green onions is a tasty, simple and inexpensive dish. Be sure to try cooking!
