Lean Salad with Mushrooms and Beans

Recipe for a very satisfying and tasty salad of mushrooms, fried with onions, and boiled beans. This salad can be prepared during fasting, on any other days, and it’s nice to diversify your menu.

Servings: 4

Ingredients

  • Champignon mushrooms – 200 g
  • Beans (dry) – 100 g
  • Bulb onions – 1 pc.
  • Soy sauce – 3-4 tbsp
  • Fresh dill – 2 branches
  • Garlic (optional) – 1 clove
  • Vegetable oil for frying – 3-4 tbsp
  • Ground black pepper – 1/3 teaspoon (to taste)
  • Salt to taste

Directions

  1. Let’s prepare products for a lean bean and champignon salad.
  2. Prepare the beans in advance. To do this, pour it with cold water for 5-8 hours. Then drain the water, rinse the beans thoroughly, add clean water and cook until tender for 1-1.5 hours. If necessary, add water during the boiling process. Salt the beans at the end of cooking (keep in mind that salted soy sauce is added to the dish).
  3. Peel the onion, cut into cubes.
  4. In a pan with heated vegetable oil, fry the onion until lightly browned.
  5. Peel the champignons, cut into thin slices.
  6. Add champignons to the onion, fry the mushrooms and onions until mushrooms are golden, stirring occasionally.
  7. In a salad bowl, combine boiled beans and fried mushrooms with onions.
  8. Season beans with mushrooms with soy sauce.
  9. Season the mushroom and bean salad with ground black pepper.
  10. Finely chop the dill, add to the salad, mix. Chopped garlic can be added if desired.
  11. Lean salad with mushrooms and beans is ready. It will be equally tasty both warm and cold.
