Lean “Lagman” with Beans

The perfect solution for a lean lunch. Simple, tasty, cheap, and cheerful.

Servings: 4

Ingredients

  • Boiled beans – 200 g
  • Carrots – 1-2 pcs.
  • Bulb onions – 1-2 pcs.
  • Bulgarian pepper – 2 pcs.
  • Tomato – 2 pcs.
  • Greens to taste
  • Pepper to taste
  • Boiling water – 1 l
  • Potatoes – 3 pcs.
  • Salt to taste
  • Vegetable oil – 30 g
  • Noodles – 400 g

Directions

  1. Peel and wash onions, cut into cubes.
  2. Peel and wash the carrots. Grate or cut into strips.
  3. Peel and wash potatoes. Cut into cubes.
  4. Wash sweet pepper, peel, cut into strips.
  5. Wash the tomatoes, cut the core, cut into cubes. Boil the kettle.
  6. Heat the cauldron, pour in vegetable oil. Put onions and carrots in hot oil. Simmer over medium heat, stirring occasionally, for 3-4 minutes.
  7. Then put the peppers and tomatoes, simmer all together for 3-4 minutes.
  8. Then lay out the potatoes. Mix.
  9. Add beans. Season with salt and pepper. Pour boiling water over. Mix. Simmer over low heat, covered, until potatoes are tender (15-20 minutes).
  10. Pour 2.5 liters of water into a saucepan. Put on fire, bring to a boil. Salt. Lay out the noodles. Bring to a boil while stirring.
  11. Cook until tender over medium heat (according to the instructions). Throw the finished noodles in a colander. Rinse with boiling water from a kettle. Allow water to drain.
  12. Pour a serving of vegetables with broth. Place a serving of noodles over the vegetables. Sprinkle with fresh herbs and serve.
