Lamb Lagman

I suggest you cook a real lamb lagman. Saturated, fragrant, and simply amazing lagman will please everyone without exception. We will cook noodles for lagman ourselves. Be sure to save this wonderful recipe.

Ingredients

  • Flour – 900 g
  • Eggs – 4 pcs.
  • Salt – 0.5 teaspoon
  • Water (for dough) – 0.5 cups
  • Lamb ribs – 800 g
  • Bulgarian pepper – 2 pcs.
  • Tomatoes – 2 pcs.
  • Salt to taste
  • Ground black pepper – to taste
  • Sweet paprika – 1 teaspoon
  • Hot paprika – 0.5 teaspoon
  • Turmeric – 1 teaspoon
  • Onions – 4-5 pcs.
  • Tomato paste – 2 tbsp
  • Potatoes – 4 pcs.
  • Carrots – 1 pc.
  • Green radish or daikon – 1 pc.
  • Garlic – 8 cloves

How to cook lamb lagman:

Directions

  1. Wash the lamb ribs and put them in a saucepan.
  2. Peel the onion from the top husk. Cut the onion into half rings and put it in a saucepan with the meat.
  3. We also add spices here: turmeric, sweet paprika, and spicy paprika.
  4. Add tomato paste and 1 glass of water to the saucepan. Simmer for 5 minutes.
  5. After 5 minutes, add 2 liters of water and cook the meat over medium heat for 50 minutes.
  6. We cut vegetables. Wash the bell pepper, peel it from seeds and cut into large pieces. My tomatoes and chop them coarsely. Peel the garlic and crush it slightly with a knife.
  7. Peel potatoes, green radish or daikon, and carrots and cut into large cubes.
  8. When the meat is cooked and there is very little broth left, put all the chopped vegetables in the pan.
  9. Pour water into the pan so that it covers all the products. Simmer for 40 minutes until vegetables are ready. Do not stir so as not to violate the integrity of the vegetables.
  10. Cooking the noodle dough. Break eggs into the flour and add salt.
  11. Stir the dough and gradually add water.
  12. Knead the elastic dough. We wrap the dough in plastic wrap and put it in the refrigerator for 30 minutes.
  13. We take out the dough from the cling film, divide it into 3 parts. Roll each part into a thin layer using flour.
  14. We turn the layer into a roll.
  15. Slice the roll thinly.
  16. Cook noodles in salted water for 1-2 minutes. We discard the noodles in a colander.
  17. Put the noodles on each plate, pour the liquid base of the sauce.
  18. Put the lamb and vegetables on top of the noodles. We serve lagman hot.
