Put the sour cream, cream quark and plain yoghurt in a bowl. Wash the cucumber and coarsely grate with the peel in a colander. Wring out the grated cucumber a little and add to the quark mixture (drink the cucumber juice rather than throw it away!) Peel the garlic cloves, grate them finely and add to the mixture. Season the tzatziki with vinegar and oil, salt and pepper. Tastes best when chilled!
