Ingredients
- 1 handful nettles, young tips
- 1 handful ground elder, young leaves
- 1 handful wild garlic, fresh
- 1 handful dandelions, young tender leaves
- 1 handful sorrel, young tender
- 1 handful yarrow, young fresh
- 1 handful ribwort, fresher
- 1 handful chickweed, young fresh
- 1 handful dead nettle
- 1 handful daisies
- 30 g butter
- 2 tablespoon spelled flour, (or other)
- 2 medium onion (s)
- 1 ½ liter vegetable stock
- salt and pepper
- nutmeg
- sweet cream, sour cream, sour cream or milk

- Sauté the peeled and cut onions in the butter and add the flour to the butter-onion-flour melt to brown. Deglaze with the broth and gradually pour in. If you like, you can add cream, sour cream or sour cream, milk does too.
- Then bring to the boil and add the washed and chopped herbs. If possible without a stem and only the young shoots. Let everything simmer for approx. 10-20 minutes and season with the spices mentioned above. The herbs shouldn`t turn dark green.
- The soup is then garnished with the daisies when it is distributed on the plates.
- This is an ancient recipe that was used to break the fast on Holy Week before Easter. It is vitalizing, rich in vitamins and detoxifying at the same time after the long winter period (fasting period). Our ancestors used the herbs to rebuild their tired bones. The herbs can be replaced or exchanged for other herbs from the region.
- It`s a beautiful tradition and very healthy.
