Ingredients

  • 1 mango (s), ripe, approx. 400 g
  • 250 ml sparkling wine
  • 2 teaspoons lemon juice
  • 75 grams sugar
  • 1 packet gelatine, ground, white
  • 250 ml cream
  • 5 tablespoon water, cold

Instructions

  1. Mix the gelatine with 5 tablespoons of cold water and let stand for 10 minutes to swell. Peel and core the mango and puree the pulp in a blender. Then mix with sparkling wine, sugar and lemon juice.
  2. Heat the swollen gelatin while stirring until it is dissolved.
  3. Then add 3 tablespoons of the mango mixture to the gelatine, then stir the gelatine-mango mixture into the rest of the mango mixture and refrigerate. Whip the cream until stiff. When the mixture sets, fold in the whipped cream. Fill into portion glasses and chill.
