Ingredients

  • 2 ½ kg red cabbage
  • 1 ½ kg apples, sour (Boskop)
  • 200 g lard (oose lard)
  • 100 ml water
  • Vinegar (apple cider vinegar)
  • salt
  • sugar
  • pepper
  • 8 grains allspice
  • Caraway seed
  • 2 bay leaves

Instructions

  1. Cut the red cabbage into small pieces, core the apples and cut into thin slices. Heat the goose lard in a large saucepan, then add the cabbage and apples in layers. A dash of apple cider vinegar, 3 hand hollows of sugar, 1 hand hollow of caraway seeds, a little salt, a little pepper, then add the water. Now simmer for 3.5 hours on a low flame with the pot closed, stirring occasionally. Let the cabbage stand overnight and simmer for another hour the next day. Season with salt and sugar - done. It takes a long time to prepare, but the red cabbage turns out very dark and tasty.
