Ingredients

  • 0.5 ½ glass morello cherries
  • 0.38 liters red wine
  • 0.5 stick ½ cinnamon
  • 50 grams sugar
  • 2 cl kirsch
  • 2 egg yolks
  • 200 mascarpone
  • Dark chocolate, grated

Instructions

  1. Bring the red wine to the boil with cinnamon and sugar. Then add the drained cherries and let them steep for 10 minutes. Drain the cherries, remove the cinnamon stick from the stock, but then pour the kirsch in there and reduce the stock by about half. Pour the stock over the cherries, let them cool and let them cool in the refrigerator.
  2. For the mascarpone cream, whip the egg yolks with the powdered sugar until frothy, and then gradually add the mascarpone.
  3. Pour the cream into bowls and put in a cool place.
  4. Before serving, the cream is garnished with the cherries and sprinkled with the grated chocolate.
