Meat Rolls with Onions, in Sour Cream Sauce

Recipe for delicious and very appetizing pork rolls with onion filling. There are a lot of onions in the filling, but after heat treatment it turns out to be crispy, juicy and without characteristic bitterness. And also meat rolls with onions will be stewed in a large amount of sour cream sauce, which in the future will become an excellent gravy for garnish with these same rolls.

Ingredients

For rolls:

  • Boneless pork loin – 600 g
  • Bulb onions – 4 pcs. (≈500 g)
  • Flour – 2 tbsp
  • Sugar – 1 teaspoon
  • Table vinegar – 1.5 tbsp
  • Sunflower oil – 40 ml
  • Salt to taste
  • Ground black pepper – to taste

For the sauce:

  • Bulb onions – 1 pc. (100 g)
  • Green onions – 0.5 bunch
  • Flour – 1 tbsp
  • Sour cream – 300 g
  • Water – 300 ml
  • Fresh dill – 0.5 bunch
  • Paprika – 1 teaspoon
  • Salt to taste
  • Ground black pepper – to taste

Directions

  1. Prepare all the necessary ingredients for making meat rolls with onions in sour cream sauce
  2. Cut the boneless pork loin into thin slices. I got 10 pieces.
  3. Beat off each piece of meat to the finest condition. Then salt the beaten meat and sprinkle with black pepper on both sides.
  4. Transfer the meat to a plate, cover with a bowl or tighten with cling film.
  5. For the filling, cut four onions into half rings.
  6. Transfer the chopped onion to a bowl, add sugar, pour in vinegar. Remember the bow slightly so that it becomes a little softer.
  7. Now start forming the rolls. On each slice of pork, place a large amount of onion, just enough to roll up a roll.
  8. Roll the stuffed meat into a roll.
  9. Bread the resulting pork rolls with onions in flour on all sides.
  10. Heat refined sunflower oil in a frying pan. Fry the onion rolls until golden brown. Rolls must be fried over high heat, not allowing them to stew.
  11. Transfer the fried meat rolls from the skillet to a bowl.
  12. It’s time to make sour cream sauce. Cut the remaining onion into cubes. Chop green onions and dill separately. Add a little oil to the pan where the rolls were just fried and fry the chopped onions in it. Then add green onions and flour, stir and fry over low heat for about a minute.
  13. Add sour cream, salt, black pepper and sweet ground paprika to the onion. Warm up for about a minute.
  14. Pour in boiling water. Let the sour cream sauce simmer and simmer for a minute. Add chopped dill at the end.
  15. Put all the onion rolls in the resulting sauce.
  16. Cover the dishes with a lid and simmer the meat rolls in sour cream sauce for about 30-40 minutes over low heat.
  17. Meat rolls with onions are ready. Serve the rolls hot with garnish and sour cream sauce.
