Meatloaf with Scrambled Eggs and Mushrooms

Meatloaf with scrambled eggs and mushrooms can be served hot as a main course, as well as cold as a snack or on sandwiches.

Servings: 10

Ingredients

  • Minced meat – 450 g
  • Bread crumbs – 4 tbsp
  • Chicken egg – 3 pcs.
  • Milk – 50 ml
  • Champignons – 150 g
  • Bulb onions – 1 pc.
  • Flour – 2 tbsp
  • Hard cheese – 40 g
  • Fresh parsley – 3 sprigs
  • Salt to taste
  • Ground black pepper – to taste
  • Vegetable oil – for frying

Directions

  1. Ingredients for making meatloaf with scrambled eggs and mushrooms.
  2. Peel the onion and cut into cubes. Wash the champignon mushrooms, dry with a paper towel and cut into slices.
  3. Fry the mushrooms and onions in a preheated pan with vegetable oil. Season with salt and pepper.
  4. Grate cheese.
  5. Cool the fried mushrooms with onions and mix with grated cheese.
  6. Add the egg, finely chopped parsley, salt and black pepper to the minced meat. You can use spices to your liking.
  7. Mix the minced meat, add crackers.
  8. Knead the minced meat thoroughly and beat it several times in a bowl. Cover the bowl with plastic wrap or a lid and let the minced meat “rest” for about 20 minutes.
  9. Prepare an omelet. Break two eggs into a bowl, season with salt and pepper, pour in the milk and beat.
  10. Add flour gradually and stir until smooth.
  11. Heat some oil in a frying pan, pour the omelet mixture and fry the omelet on both sides.
  12. Put the hot omelet on a cutting board. Spread the mushroom filling over the surface of the omelet.
  13. Roll up the omelet with mushrooms. It is important to roll the omelet when it is hot so that it does not crack.
  14. Spread foil on a baking sheet. Place the minced meat in a rectangle on the foil. Place an omelet in the center of the rectangle.
  15. Using foil, roll the minced meat into a roll, trim from the edges so that there are no gaps, give the roll an even shape. Wrap the roll in foil and put in an oven heated to 200 degrees for 40 minutes.
  16. At the end of cooking, unfold the foil and bake the roll for another 10 minutes. Then take the rollout of the oven and cool.
  17. Delicious and juicy meatloaf with scrambled eggs and mushrooms is ready.
  18. Cut meatloaf with scrambled eggs and mushrooms in portions and serve.
