Mskuta (African Orange more Muffin)

Mskuta is an airy orange cake that is classified as African cuisine. There is nothing exotic, except for the “homeland” of the recipe, neither in the ingredients nor in the cooking process, so you can safely start preparing this delicious cake – it will work the first time!

Ingredients

  • Flour – 150 g
  • Eggs – 3 pcs.
  • Orange – 0.5 pcs.
  • Baking powder – 1 teaspoon.
  • Salt – 1 pinch
  • Sugar – 25 g
  • Powdered sugar – 100 g
  • Milk – 25 ml

Directions

  1. Prepare foods for your African orange muffin.
  2. Combine egg yolks in a bowl with powdered sugar.
  3. Whisk the yolks with the icing sugar for about a minute. Pour the juice of half an orange and milk into the resulting mixture.
  4. Beat the mixture with a mixer for another 30 seconds.
  5. Sift the flour mixed with baking powder into the resulting mixture. Stir dry ingredients into liquid base.
  6. Add the zest of half an orange to the resulting dough. Stir the dough.
  7. In another bowl, beat the egg whites with a pinch of salt and 25 g of sugar until strong, firm peaks are obtained.
  8. Stir the egg whites into the orange cake batter in two rounds.
  9. The finished dough for mskuta should be light, airy, it is very similar to ordinary biscuit dough.
  10. Transfer the dough to a muffin pan and bake the scoop in an oven preheated to 165 degrees for 50 minutes.
  11. Cool the finished cake in the mold for 5 minutes, then transfer to a plate and sprinkle with powdered sugar through a strainer.
  12. Instead of powdered sugar, mscuta can be poured with chocolate icing, caramel syrup, or decorated as you wish.
