Ingredients

  • 350 g potato (s), peeled and diced
  • 350 ml milk
  • 1 large onion (s)
  • 500 ml vegetable stock
  • salt
  • pepper
  • nutmeg
  • 4 tablespoon mustard, medium hot

Instructions

  1. Finely dice the onion and sauté in a pan with olive oil until translucent. Add the potatoes and cook for 2-3 minutes. Add the vegetable stock and milk, bring to the boil and cook over a low flame for about 20 minutes.
  2. Remove from heat and puree with the cutting stick. Season with salt, pepper and a little grated nutmeg and add the mustard. No more cooking, just mix.
  3. Serve with frothed milk and cress to taste.
