Ingredients

  • 350 g potato (s)
  • 2 small onions
  • 1 tablespoon butter
  • 500 ml vegetable stock
  • 350 ml milk
  • 2 tablespoon mustard, medium hot (Bautz`ner mustard)
  • 2 tablespoon mustard, grainy, sweet (Bautz`ner Kremserenf)
  • 1 squirt lemon juice
  • salt and pepper
  • nutmeg

Instructions

  1. Peel and dice the potatoes. Peel and dice the onions.
  2. Melt the butter in a saucepan and sauté the onions until translucent. Add the potatoes and cook for 2 minutes. Pour in the vegetable stock and milk, bring to the boil and cook the potatoes over medium heat for 15-20 minutes.
  3. Remove the soup from the stove and puree with a blender. Then season them with salt, pepper, nutmeg, lemon juice and mustard. Do not let the soup boil anymore.
  4. Serve the soup garnished with milk foam, grated nutmeg and garden cress, depending on your taste.
