New Year’s Puff Salad “Goby” with Chicken, Fresh Cucumbers and Cheese

Original and light “Bull” salad for the new year, 2021. Very delicate and delicious puff salad with chicken fillet, fresh cucumbers and cheese, which is very quick to cook!

Ingredients

  • Boiled potatoes – 200 g (2-3 pcs.)
  • Boiled chicken fillet – 200 g
  • Bulb onions – 1 pc.
  • Fresh cucumber – 150 g (1 pc.)
  • Boiled eggs – 6 pcs.
  • Hard cheese – 70 g
  • Mayonnaise – to taste
  • Salt to taste

For decoration:

  • Rye bread – 1 slice
  • Olives – 2 pcs.
  • Hard cheese
  • Lettuce leaves
  • Fresh parsley
  • Carrot

Directions

  1. Boil potatoes, eggs and chicken in advance. Peel the onion and chop finely. Pour hot water over so that the onion is completely covered and leave for 7 minutes.
  2. Peel and grate the potatoes. Cut the chicken fillet into small pieces. Cut fresh cucumber into small strips.
  3. Peel and divide the eggs into whites and yolks. Grate whites, yolks and cheese separately on a medium or fine grater.
  4. Put a detachable form on the dish (I have 18 cm in diameter), it is convenient to lay out the salad in layers in it. If you do not have this shape, you can lay out the layers of salad directly on the dish. The first layer is boiled potatoes, it needs to be salted and greased with mayonnaise.
  5. The second layer is chicken fillet. Throw the onion on a sieve so that the liquid glass. Place the onion over the chicken. Grease this layer well with mayonnaise so that the fillet is saturated and juicy.
  6. The third layer – yolks, add mayonnaise and salt to taste.
  7. Then put the cucumbers and mayonnaise again.
  8. The next layer is cheese and mayonnaise. The last layer is grated proteins. Put the salad in the refrigerator to cool for 30 minutes.
  9. Carefully remove the serving ring and decorate the salad. Cut out circles-eyes, triangles-horns and semicircles-ears from slices of cheese. Grate a piece of cheese on a fine grater – for bangs. Cut one olive tree across into 4 parts (a pair for the pupils and nostrils), and cut the other into strips (for the cilia). Cut out the muzzle and semicircles-ears from rye bread. Lay out all the decor elements on the salad. Add parsley, imitating a bull chewing grass. Add a drop of mayonnaise to the pupils. Put a small circle of carrots into the nostrils. Decorate a plate with salad with lettuce leaves. I also cut snowflakes out of carrots and laid them on top of lettuce leaves. The goby salad is ready for the New Year’s table!
