Ingredients
- olive oil
- 1 medium onion (s)
- 2 medium clove garlic (s)
- 400 g zucchini
- 400 ml tomatoes, strained or in pieces
- 2 tablespoon balsamic vinegar
- 4 tablespoon soy sauce
- oregano
- basil
- salt and pepper
- 250 g pasta

- Dice the onion and finely chop or press the garlic.
- Sauté in plenty of olive oil in a saucepan on the highest setting for about 5 minutes. Roughly dice the zucchini, add and cook for another 5 minutes. Deglaze with the strained or chunky tomatoes. Turn the heat down to low. Season with the remaining ingredients and simmer gently for about 15 minutes.
- In the meantime, cook the pasta according to the instructions on the package (approx. 80 - 120 g per person, depending on how hungry you are).
- Just before serving, season to taste again and add seasoning if necessary. Garnish with fresh basil.
