Ingredients

  • 500 g peas, frozen
  • 1 medium onion (s), finely diced
  • 1 piece (s) ginger (the size a thumb), peeled, finely diced
  • 2 teaspoons coconut oil
  • 400 ml coconut milk
  • 500 ml vegetable stock, possibly instant
  • 0.5 ½ lemon (s), juice it
  • 0.5 ½ bunch basil
  • possibly salt

Instructions

  1. Heat coconut oil in a saucepan, sauté the onion and ginger in it, add the peas, coconut milk and vegetable stock, bring to the boil and simmer over medium heat for approx. 5 minutes until the peas are cooked through.
  2. Remove the saucepan from the heat, add the basil and lemon juice and puree with a blender. Season with salt if necessary.
