Ingredients

  • 500 g tomato (s), dried
  • 1 liter water
  • 5 teaspoons salt
  • 5 teaspoons sugar
  • 10 tablespoon vinegar (fruit vinegar)
  • 10 cloves garlic
  • 1 small Glass pepper - grains, green
  • 2 glasses capers (double the amount pepper), small ones
  • 3 chilli pepper (s)
  • herbs Provence
  • Oil (olive oil)

Instructions

  1. Cook the tomatoes with water, salt, sugar and vinegar for 3-4 minutes. Then pour into a colander and drain.
  2. Finely chop the garlic cloves, pour the green peppercorns and capers as well as the chopped chilli peppers with herbs from Provence into a glass jar and fill up with olive oil.
  3. After a week, the mixture is * ready to eat * and can be served as an antipasti or added to a salad.
