Pies with Apples, Made from Shortcrust Pastry with Sour Cream

Delicate, sandy puff pastry with sour cream and butter goes well with apple filling. Lemon zest, vanilla and cinnamon give the apple pies a wonderful spicy flavor.

Cook: 1 hour

Ingredients

For the dough:

  • Butter (chilled) – 200 g
  • Sour cream – 200 g
  • Flour – 400 g (3 cups with a capacity of 200 g)
  • Salt – 1 pinch

For filling:

  • Apples – 500 g
  • Butter – 30 g
  • Sugar – 30 g (to taste)
  • Potato starch – 0.5 teaspoon
  • Lemon (zest) – 0.5 pcs.
  • Ground cinnamon – 1 teaspoon
  • Vanillin – 1 pinch

Directions

  1. We prepare the necessary products.
  2. Sift flour into a bowl, add salt.
    Rub the cooled butter into flour on a coarse grater. Rub flour and butter with our hands until crumbs form.
  3. Add sour cream to the crumb (also from the refrigerator) and quickly knead the dough.
  4. Roll the dough into a ball, place it in a plastic bag and put it in the refrigerator for at least 1-2 hours.
  5. Wash apples, peel and seed. Cut into small cubes.
  6. Pour the apples into a separate bowl, then remove the zest (yellow layer of the peel) from the lemon with a fine grater. Add cinnamon, sugar, vanillin. We mix.
  7. Heat the butter in a frying pan, put the apples and simmer for 7 minutes over medium heat.
  8. Then add starch to the apples to remove excess moisture. Stir the filling and let it cool.
    We turn on the oven to heat up to 180 degrees.
  9. We take the dough out of the refrigerator and divide it into 2-3 parts so that it is convenient to roll it out.
    Roll out the dough into a layer 3-4 mm thick.
  10. Using a cutting with a diameter of 7-9 cm, cut out circles from the dough layer.
  11. Put an incomplete tablespoon of the filling in the center of the circle. We connect the edges of the dough, as if making dumplings. Then we collect the seam in the center and form a “bag”.
  12. Cover the baking sheet with baking paper.
    We spread the pies on a baking sheet and send them to an oven preheated to 180 degrees, bake for 25 minutes.
  13. Delicate shortcrust pies with butter and sour cream, with apples are ready.
