Pork and Minced Chicken Roll with Mushrooms

Pork and minced chicken roll with mushrooms – instead of sausage on the festive table! Cool recipe that will not leave anyone indifferent! A fun way to make meatloaf, no big deal! And a tasty result in the end, try it for your health!

Ingredients

  • Pork tenderloin – 350-400 g
  • Water – 500 ml
  • Salt – 40 g
  • Sugar – 20 g
  • Badian (asterisk) – 1 pc.
  • Ginger root – 1 small piece

For minced meat:

  • Chicken fillet – 500 g
  • Champignons – 200 g
  • Cream 10% – 200 ml
  • Egg whites – 2 pcs.
  • Salt – 2 teaspoon
  • Garlic – 2 cloves
    To sprinkle the roll:
  • Sesame (white and black) – 3-4 tbsp

Directions

  1. We start by marinating the pork tenderloin.
  2. Cook the pickle brine. In a saucepan, combine water with salt, sugar, star anise and ginger. We put on fire and boil until salt and sugar dissolve.
    Cool the brine.
  3. After that, fill the pork tenderloin with cooled brine and send it to the refrigerator for 5-6 hours (you can overnight).
  4. When the tenderloin is marinated, you can do minced meat.
  5. Pass the peeled garlic through a press. Cut the chicken fillet into large pieces and send it to the bowl of a food processor. Add egg whites, garlic and salt. Pour in half the cream.
  6. Grind. Pour the remaining cream in portions, focusing on the consistency of the mass.
  7. Add the mushrooms, cut into small cubes, to the resulting mass. Mix everything well.
  8. We turn on the oven and heat up to 160 degrees. Put the minced meat on a cling film and distribute. Place the marinated pork tenderloin in the middle.
  9. Using the film, we wrap the minced meat with pork in a dense “candy”.
  10. We send it to the freezer so that the top layer (minced meat) grabs. By time – from 15 to 40 minutes. Then we unfold the film.
  11. We repack the frozen “loaf” in a collagen film (or parchment for baking) and tie the edges with strings. Wrap it tightly in foil, trying to keep all the seams on top.
  12. We send the meatloaf with mushrooms to the oven for 2.5 hours.
  13. Without unwrapping the foil, let the roll cool well (I leave it overnight). Then we remove the foil and collagen film (or parchment), grease the roll with the meat juice released during baking and sprinkle with sesame seeds.
  14. Delicious and effective meat appetizer is ready!
