Potato and Zucchini Casserole with Cheese

Baked vegetable puree with a tender cheese crust is an original side dish for meat and fish dishes. It’s very easy to prepare!

Cook: 40 minutes

Servings: 5

Ingredients

  • Potatoes – 400 g
  • Zucchini – 400 g
  • Egg – 1 pc.
  • Hard cheese – 100 g
  • Garlic – 1 clove
  • Salt to taste
  • Ground black pepper – to taste

Directions

  1. Peel and dice the potatoes and zucchini. Grate the cheese. Chop the garlic.
  2. Pour vegetables with water, bring to a boil and simmer over low heat for 20 minutes. Salt, pepper, mash in mashed potatoes.
  3. Beat in an egg. Add half the grated cheese and garlic. Stir.
  4. Place in an ovenproof dish. Sprinkle with the remaining cheese.
  5. Cook the potato and zucchini casserole with cheese in an oven preheated to 180 degrees for about 20 minutes.
