Potato Casserole with Minced Meat and Vegetables

This potato casserole with minced meat and vegetables is inspired by shepherd’s pie, a famous British dish made from mashed potatoes and meat, traditionally lamb, popular in Welsh cuisine. This casserole also includes cheese and leeks, one of the national symbols of Wales.

Ingredients

  • Potatoes – 700 g
  • Minced meat – 400 g
  • Carrots – 1 pc.
  • Bulb onions – 1 pc.
  • Frozen green peas – 100 g
  • Canned tomatoes in their own juice – 200 g
  • Leeks – 100 g
  • Fresh parsley – 3-4 sprigs
  • Fresh thyme – 2-3 sprigs
  • Butter – 80 g
  • Hard cheese – 100 g
  • Flour – 2 tbsp
  • Water (or broth) – 100 ml
  • Ground nutmeg – 2 pinches
  • Salt to taste
  • Ground black pepper – to taste
  • Vegetable oil – for frying

Directions

  1. Prepare the necessary foods for potato casserole with meat.
  2. Peel the potatoes, cut into pieces, add cold water, and put on fire. When the water boils, season with salt and cook the potatoes over low heat until soft.
  3. Dice the onion. Grate carrots (or also cut into cubes). In a frying pan, fry the onions and carrots in vegetable oil until soft.
  4. Put the minced meat in the pan. Fry, stirring and breaking the minced meat lumps, for 5 minutes, so that all the minced meat completely changes color. Add frozen green peas (do not thaw), stir.
  5. Add flour, mix. Pour in hot water or broth (you can use the water in which the potatoes are boiled).
  6. Add tomatoes to your own juice. Season with salt and spices cover, and simmer over low heat for 10 minutes. Then add finely chopped herbs, cook for another 10 minutes.
  7. When the potatoes are boiled, drain the pan, add the butter and mash the potatoes.
  8. Put the fried minced meat with vegetables on the bottom of the baking dish. Top with mashed potatoes. Smooth with a spoon or spatula. Sprinkle with chopped leeks and grated cheese on top.
  9. Place in an oven preheated to 180 degrees and cook the potato and minced meat casserole for 20 minutes.
  10. Remove the finished shepherd’s pie (Welsh pie) from the oven and immediately serve the potato-meat casserole, hot.
