Ingredients
- 200 g mushrooms, e.., Shiitake, kin oyster mushrooms or brown mushrooms
- 2 tablespoon olive oil
- 2 cloves garlic)
- 4 egg (s)
- 150 g sour cream
- 100 ml milk
- 0.5 teaspoon ½ baking powder
- 60 g flour
- salt and pepper
- 2 teaspoons dried thyme
- 300 g cherry tomato (s)
- 100 g rocket
- 200 g feta cheese
- Oil, for greasing the quiche pan (28 pieces)
- Breadcrumbs

- Preheat oven to 180 degrees.
- Clean the mushrooms and cut into wide strips. Heat the oil in a pan and fry the mushrooms over a high heat. Peel and chop the garlic. Finally, add to the pan and toss briefly. Let cool down. Eggs and sour cream are good
- stir. Thoroughly stir in the flour and baking powder and slowly add the milk. Season well with salt, pepper and thyme.
- Grease the quiche form thinly and sprinkle with breadcrumbs. Wash the cherry tomatoes and cut in half if necessary. Wash the rocket and spin dry. Cut off the thick ends of the stems and tear apart half of the rocket. Crumble the feta as finely as possible. Mix half of the feta, the torn rocket and the rest of the vegetables into the egg mixture. Distribute everything in the form. Bake the casserole for approx. 30 minutes.
- Before serving, spread the remaining rocket and feta over the casserole.
