Red Borsch with Cracklings and Beans

Red borscht is a culinary treasure. Who doesn’t like aromatic red borscht for lunch! Borscht will be especially tasty and satisfying with beans and cracklings with garlic.

Servings: 8

Ingredients

  • Beets – 1-2 pcs.
  • White cabbage – 200-300 g
  • Dried beans – 1 glass
  • Lard – 50 g
  • Potatoes – 3-4 pcs.
  • Carrots – 1 pc.
  • Bulb onions – 1 pc.
  • Garlic – 2-3 cloves
  • Tomato paste – 1-2 tbsp
  • Salt to taste
  • Pepper to taste
  • Bay leaf – to taste
  • Greens to taste

Directions

  1. In the evening, rinse the beans, put them in a saucepan, cover them with cold water. The next day, put on fire, bring to a boil and cook over low heat, covered, until tender, 40-60 minutes.
  2. Wash the beets, put them in a saucepan, cover with cold water. Put the pan on the fire. Boil. Cook over low heat, covered, until tender (about an hour, check the softness of the beets). Drain the water.
  3. Peel the carrots, wash, cut into thin strips. Peel the onion, wash, cut into cubes. Peel the finished beets, cut into thin strips.
  4. Peel potatoes, wash, cut into pieces. Cut the cabbage into thin strips.
  5. Boil 3 liters of water. Put prepared onions, beets, carrots, potatoes, cabbage in boiling water. Cook for 15-20 minutes over medium heat, covered.
  6. Dice the salted lard. Preheat a frying pan, add bacon. Fry lard over medium heat, stirring occasionally, until golden brown (5-7 minutes).
  7. Peel the garlic. Cut into small pieces. Place the greaves and garlic in a mortar. Salt. Thoroughly grind the greaves with garlic into a homogeneous mass.
  8. Put the tomato in a pan with heated pork fat (after frying the pieces of bacon). Simmer for 1-2 minutes, stirring occasionally.
  9. Pour 1 soup ladle into the mortar. Stir, pour the contents of the mortar into a saucepan. Also, add tomato and beans to the pot with borsch. Mix well. Season with salt to taste, pepper, add the bay leaf. Cover, simmer the red borsch with cracklings and beans for 10 minutes over the lowest heat. Wash and finely chop the herbs, add to the borscht.
  10. Remove the prepared borscht from the heat. Let the red borscht with cracklings and beans brew for 20 minutes. Red borsch with cracklings and beans is ready. Serve with sour cream. Bon Appetit!
