Red Eyes with Rice step 2
  3. While the bacon is fried, chop the celery.
  4. Finely chop the onion and garlic.
  5. Let’s wait until almost all the fat from the bacon has melted …
  6. … add chopped vegetables and season generously with black pepper.
  7. When the vegetables have lost their volume and some of them are crispy and dark in color, add enough fresh coffee to cover the area. We close the lid and cook for 1 hour. (Add coffee as it boils away)
  8. We open the legumes.
  9. Add the beans to the vegetable coffee blend.
  10. Cook for 20 minutes. This is enough time to tackle the side dish and cook the rice.
  11. 20 minutes before serving, take a crusher and press a quarter of the beans.
  12. Then let the beans cool slightly.
Red Eyes with Rice step 12
  13. The dish is ready.
Bon Appetit!
