Rice Cutlets with Onions, Carrots and Green Onions

A fairly simple recipe for rice and vegetable cutlets. Mix boiled rice, fried onions, and carrots, chopped green onions, egg, flour, and spices. From the resulting “minced meat” we form cutlets, bread in breadcrumbs, and fry until golden brown. These meatless cutlets are completely easy to prepare, and a simple set of products will motivate you to repeat the recipe over and over again.

Ingredients

  • Boiled rice – 500 g
  • or dry rice – 135 g
  • Carrots – 300 g (2 pcs.)
  • Onions – 190 g (1 pc.)
  • Eggs – 2 pcs.
  • Flour – 35-40 g (1-1.5 tablespoons)
  • Vegetable oil – 4-5 tbsp
  • Bread crumbs – 150 g
  • or white bread – 230 g
  • Green onion – 4-5 branches
  • Salt to taste
  • Ground black pepper – to taste

Directions

  1. Put the cubes on a baking sheet and dry in the oven for 15-20 minutes, until golden brown. Cool it down.
  2. Place the dried crackers in a blender bowl.
  3. Grind crackers to small crumbs.
  4. We prepare the necessary products for cutlets. Rice can be taken ready-made. If the rice is dry, it will need to be rinsed several times until the water is clear. Boil two parts of slightly salted water (270-300 ml), add dry rice (135 g), and boil it under the lid for 20-25 minutes, until tender. After cooking, leave the rice to cool in a saucepan for 10-15 minutes; the water remaining after this must be drained.
  5. Peel and wash onions and carrots. Rub the carrots on a fine grater, cut the onion into small cubes.
  6. At 2 tablespoon. tablespoons of vegetable oil, fry the onions and carrots over medium heat for 10 minutes, until soft and golden.
  7. Wash green onions and chop finely.
  8. In a deep bowl, mix rice, onions with carrots, green onions, and eggs. Salt, pepper, and mix.
  9. Add flour in parts, stirring each time so that the flour is evenly distributed.
  10. We form round cutlets from the minced meat obtained and breaded in breadcrumbs.
  11. Heat 2 tablespoon in a frying pan. tablespoons of vegetable oil. Fry the cutlets on each side for 2-3 minutes, until golden brown. Add oil if necessary.
  12. Put the finished cutlets on a paper towel to remove excess fat.
