Roll with Minced Meat and Green Onions (Steamed)

In Uzbek cuisine, there are similar recipes for steamed rolls, stuffed with minced meat or potatoes. This dish is called “khanum”. And today the favorite version of our family, the taste of which I remember from childhood, is a thin dough roll with meat and green onions. Cook – and all the relatives will gather for dinner or lunch!

Ingredients

Dough (for 3 rolls):

  • Flour – 500 g
  • Water – 250 ml
  • Salt – 1 teaspoon
  • Vegetable oil – 2 tablespoons

Filling (for 2 rolls):

  • Minced meat – 500 g
  • Salt – 2 pinches
  • Ground black pepper
  • Vegetable oil – 2 tablespoons
  • Green onions – 1 large bunch

Directions

  1. Dissolve the salt in water.
  2. Add water along with vegetable oil to flour.
  3. Put it in a ball and knead the dough thoroughly for several minutes.
  4. The dough is soft, elastic. We leave to lie down (rest) under the film for 30 minutes.
  5. Preparing products for the filling. We wash and dry the green onions well.
  6. Finely chop bright, juicy onions.
  7. Sprinkle the herbs with a pinch of salt and lightly crush.
  8. We collect the filling. Add minced meat, black pepper, vegetable oil (1 tablespoon) and the remaining salt to the onion. Mix well.
  9. The dough turned out great! We divide it into three parts.
  10. Roll out the dough into a large and thin layer.
  11. We lubricate the layer with vegetable oil and spread part of the filling. We distribute evenly.
  12. Roll up the roll tightly, the edges must be pinched.
  13. Cook in a double boiler (mantover), greasing the container with oil, 40 minutes.
  14. The roll with minced meat and green onions is ready! The dough is delicious, the filling is juicy!
  15. Very often we cook this roll for a couple, the whole family is delighted! You can make a sauce or simply sprinkle the finished dish with red pepper.
