If you come across a fish whose belly is stuffed with caviar, you are very lucky! By salting carp or other fish caviar, you will get a real delicacy that can be easily prepared at home.
Ingredients
Carp Caviar (peeled from films) – 600 g
Salt – 2 tablespoon heaped spoons
Water – 1 l
Directions
Prepare all the ingredients necessary for salting carp roe. There are only three of them: this is caviar itself, salt, and water.
I have such wonderful carp caviar, its weight is 800 g. But according to this recipe, you can salt any fish caviar!
The first step is to break the caviar, i.e. clean it from films. To do this, you need a regular grater with large holes and a bowl. Take a small piece of caviar and rub it gently and effortlessly.
The caviar will seep through the holes in the grater, but the film will remain on the grater.
Thus, piece by piece, breakthrough all the caviar.
Now prepare the brine. To do this, pour salt into a ladle or saucepan.
Pour salt with water, place on the stove, and bring to a boil. Boil the brine for about 1-2 minutes.
Pour the caviar with steep salted boiling water, stirring continuously. Stir the caviar in this way for about a minute so that the boiling water gains access to each piece of caviar. Now leave the caviar in the brine for 10 minutes.
To strain the caviar, build the following structure: put a bowl with a colander or sieve inside on the table. Line a sieve with cheesecloth folded in 3-4 layers.
Pour caviar in brine into cheesecloth and leave until the water is completely drained from the caviar. You can additionally hang the caviar in gauze so that the water can drain better.
That’s all. Salted carp caviar is ready. As soon as it cools down, you can try.
This caviar is great for making sandwiches or more complex snacks.
